Healthy Oat & Date Cookie Recipe

How It Works
Here's an easy recipe for delicious healthy cookies (gluten-free, vegan, sugar-free!). They're tasty enough that even the not-so-health-conscious people in your life will love them and healthy enough that you can sub them in for breakfast when you're in a rush.
All you need to do is combine the ingredients in the food processor, use your hands to make little balls out of the mixture, then squish them onto a coconut-oil-greased baking sheet and bake for 10 minutes at 350F (they should be golden brown).
Ingredients:
- tahini (0.5 cups)
- rolled oats (1.5 cups)
- dates (1.5 cups, de-pitted)
- 1 tbs coconut oil (& extra for greasing the pan)
- vanilla extract (1 tsp)
- sea salt (just a pinch, optional)
- maca powder (1 tsp., optional)

Story
My recipe is based on a three-ingredient recipe from Estado Natural (who also gets photo credit for the photo in this tip. My cookies disappeared before I had a chance to take a photo!). I added the coconut oil, maca powder, and vanilla and loved how they came out – my friend told me they were the most delicious oatmeal cookies he'd ever tried. But if you're short on one of the ingredients, the recipe will work with just dates, tahini and oats – as per Estado Natural's original recipe.
You could add other spices to the mix too (like cinnamon and/or ginger) – it's a nice and flexible starter recipe.
